| 170g (6oz) tuna steak, fresh or defrosted, diced 1 x 15ml spoon (1 tablespoon) vegetable oil 1 small onion, quartered 50g (1 3/4oz) oyster mushrooms, sliced 50g (1 3/4oz)bean sprouts 2 spinach leaves, stalks removed and shredded quarter of a small red pepper, sliced 2 spring onions, halved and cut into 2.5cm (1inch) lengths 60g (2oz) transparent noodles, rinsed 60ml (2fl oz) light soy sauce 0.5 x 5ml spoon (half a teaspoon) sugar Heat the oil in a frying pan or wok. Add the tuna and fry for 2-3 minutes. Add the onions, mushrooms, bean sprouts, spinach, red pepper, spring onions and noodles. Stir fry over a high heat for 2 minutes. Pour over the combined soy sauce and sugar. Serve immediately. Serves 1 Nutritional values per portion
